The Veranda

The Veranda is a flavour experience from Norrland, where all senses are present. With produce from the highest mountains and water from the deepest valleys. At the Veranda we want to capture Norrland and convey the noble art of cooking with nature’s resources. The Arctic char from the ice fishing, and the reindeer grazing on the mountain.

We want to work as they did in the old days when one would take care of the produce when it was in peak season. To harvest in the summer to save, ferment, salt, smoke, dry, and pickle them for the winter season.

In the summer we pick lingonberries, blueberries, and different variations of mushrooms. We fish salmon, whitefish and pike. Then we preserve and refine them for the coming winter. During the hunting season in autumn, we source grouse, moose, and reindeer that, together with the summer’s harvest, turn into a well-stocked pantry filled with amazing flavour experiences.

It is all about our love for nature, our magical surroundings, and a careful way of looking after what we have around us.

The Veranda menu is changeable and will be adjusted based on the produce we have on the day. The menu will not be revealed beforehand, but every dish will be a surprise where all senses will be present in the experience.

At the Veranda we will take gluten and lactose allergies into account. We do not offer a vegetarian or vegan Veranda menu. For vegan and vegetarian dishes, we recommend any of our other restaurant options.

The Veranda is open on request from September 1st, 2024 for groups of 8-14 people.
